Monday Menu Plan and Pantry Challenge Wrap Up & Reveal

Well, the Pantry Challenge has come to an end. I'm so glad I did it. My pantry looks so much better! It also encouraged me to reevaluate our eating habits. I need to do some tweaking to step things up nutritionally for us.

Here's how I did:

1. Get the grocery budget back on track.
I squeaked in just under budget spending $294.35 of our $300 budget. We ate out more this week than usual though so we overspent in that area. I need to work on being more disciplined overall with grocery/eating out spending. I had let that slide some at the end of last year.

2. Use it up.
I did use up a lot of what we had in our pantry and freezer which made organizing it all go much easier.

3. Get organized.
Mission accomplished. My pantry looks so much better.

I added baskets for storage, grouping similar items together. For example, baking supplies are in one basket, party plates & napkins are in another, etc. I incorporated an idea I found on Pinterest, and organized my wraps & storage bags with magazine holders. And, I bought more glass jars to store my variety of flours and sugars.

I'm so happy to have my pantry organized. It's so much easier to see what I have on hand now. 

Now, here's what's on our menu this week:

Breakfast: Breakfast Cookies, cereal, fruit, yogurt, toast

Dinner:

Soup & Sandwiches

Homemade Pizza

Shrimp(steamed & fried), salad, corn on the cob (and hopefully we'll have enough leftovers so I can make this Zesty Lime Shrimp and Avocado Salad for lunch this week.)

Chicken & Wild Rice Casserole (never made it last week), salad


Breakfast for dinner or leftovers

No Worries

In case you are like me and need to be reminded of this from time to time...

Do not worry about your life, what you will eat or drink; 
or about your body, what you will wear. 
Is not life more than food, and the body more than clothes?
Look at the birds of the air; they do not sow or reap or store away in barns,
and yet your heavenly Father feeds them. 
Are you not much more valuable than they? 
Can any one of you by worrying add a single hour to your life? 
And why do you worry about clothes? 
See how the flowers of the field grow. The do not labor or spin.
Yet I tell you that not even Solomon in all his splendor 
was dressed like one of these.
If that is how God clothes the grass of the field, which is here today
and tomorrow in thrown into the fire, 
will he not much more clothe you -- you of little faith?
So do not worry, saying, "What shall  we eat?" or "What shall we drink?" 
or "What shall we wear?"
For the pagans run after all these things, and your heavenly Father 
knows that you need them.
But seek first his kingdom and his righteousness, 
and all these things will be given to you as well.
Therefore do not worry about tomorrow, for tomorrow will worry about itself.
Each day has enough trouble of its own.

I have to fight letting doubts and worry creep into my mind. Many times the things I catch myself worrying about are so trivial. Other times they are more serious. But no matter what they are a waste of time and a sign of just how much I need God. I am learning to go straight to Him either through prayer or his word to fight it before I waste too much time on it. But it's a process and thankfully He's very, very patient with me.

Thank you, Heavenly Father, for your reminders that You are in control
and that we can live a life free from worry.
